Our production is based on a combination of high quality research
and a deep relationship with the local territory. We produce unfiltered
and unpasteurized, high fermentation beers without preservatives or
chemical flavourings and additives. We devote enormous attention to
qualitative parameters and have an internal testing laboratory where
we carry out daily chemical and microbiological controls of our beers.
At the brewery Birrificio San Quirico the ancient traditions of the
art of brewery are combined with the latest and most advanced scientific
research: in partnership with the University of Siena and with CERB
(Centre of Excellence for the Research of Beer) at Perugia University,
a research project has been launched – the first of its kind
in Italy – focusing on investigating possible uses of the plants
native to the Val d’Orcia in the production of beer.

In addition, an experimental cultivation of hops has been initiated
to test the possibility of its acclimatization in Val d’Orcia.
We pay particular attention to environmental sustainability of the
production activity, and hence decided to promote an awareness campaign
amongst our clients for the collection of used bottles. The “Bir-riciclo” (Beer-recycle)
project rewards clients who return empty bottles with a discount, thus
enabling us to intelligently recuperate much of the distributed glass.
Our promotional material is printed on recycled paper and the residues
from the production of the beer are re-used as feed for local animals.
